MUGI-TORO” is a cooked MUGI rice with Japanese yam called “JINENJYO (自然薯).” The yam is grated in a SURI-BACHI mortar with a pestle.
⚫️How to make “MUGI-TORO”
1 Cook MUGI rice.
2 Prepare JINeNJYO. If it is not available, you can use a yam or NAGA-IMO.
3 Grate 2 in a SURI-BACHI mortar with a pestle until the yam becomes creamy.
